Soothing Sage, Mint and Ginger Tea (GF/WF/DF/SF/VEG)

This soothing tea is the perfect tummy-soother. The refreshing blast from the sage and mint paired with the anti-inflammatory, antiemetic and appetite-reducing effects of the ginger mean that this brew is a perfect place to start for those embarking on a journey of gut-healing.
2.5cm (1 inch) piece of ginger, peeled and sliced
1 handful of mint leaves
1 tbsp roughly chopped sage leaves
2 ½ cups (625ml) boiling filtered water
A squeeze of lemon juice
Liquid honey or stevia to taste
As with any tea, it is a straightforward process and the key is in the brewing time.
Put the ginger, mint, and sage in a warmed teapot or jug. Add the boiling water and the lemon juice then cover with a lid or a tea towel and allow it to infuse for 15 minutes. Voila!
